This soup is packed with nutrient-dense veggies, healthy fats, minerals, and fiber to support digestion and soothe inflammation — while giving your skin the building blocks it needs to repair and thrive.

Ingredients

  • 2 tbsp avocado oil

  • 2 tsp mineral salt

  • 2 crowns broccoli, roughly chopped

  • 1 yellow onion, chopped

  • 2–3 cloves garlic, chopped

  • 1 small butternut squash, chopped

  • 1 cup kale, chopped

  • 1 cup coconut milk

  • 14 oz grass-fed bone broth

  • 10 oz water

  • Juice of 1 lemon

  • 1 tbsp nutritional yeast

Instructions

  1. Warm a large pot over medium heat. Add avocado oil, onions, garlic, and mineral salt. Sauté for 3–5 minutes, until fragrant and softened.

  2. Prep the veggies: Chop the broccoli, kale and butternut squash into similar-sized pieces so they cook evenly.

  3. Add bone broth, water, broccoli, kale, and butternut squash to the pot. Bring to a boil, then reduce heat to low. Cover and cook for 25 minutes, stirring occasionally to ensure the vegetables soften fully.

  4. Once vegetables are tender, remove the lid. Stir in coconut milk, nutritional yeast, and lemon juice. Let cook for an additional 5 minutes.

  5. Transfer the mixture to a blender (or use an immersion blender) and blend until creamy and smooth.

  6. Pour into bowls and top with avocado slices or your favorite protein.

    *Pro tip: Sprinkle with extra salt, pepper, or even your favorite hot sauce for an extra kick!
